Seared Flat Iron Steak with Caramelized Red Onions
Yields: 4 p

Ingredients
8 oz. Flat Iron Steaks - 4 pcs
Garlic chips fried in olive oil -1 oz.
Red Onion rings, thin sliced, seared- 4 oz.
Red Bell peppers, roasted, peeled, minced- .5 cup
Wine, Marsala Florio, dry - .5 cup
Demi-Glace` or Brown Gravy -1 qtr.
Butter, unsalted - 2 oz.
Olive oil, Virgin - 4 floz
Salt Kosher -to taste
Black Pepper, fresh ground - to taste
Asparagus, medium - 10 pcs
Method
Season steaks with salt and pepper, sear in heavy iron pan till almost
Desired cook temperature, removed to holding plat. Add Olive oil, caramelize
Onions, deglaze with wine, reduce to a syrup, add red peppers, and Demi.
Season to taste, finish with butter. Plate steaks, smother with sauce arrange
