Chipotle Lime Chicken

Ingredients:
5 oz. trimmed chicken breast (cut into 1" long, 1/4 " wide strips)
1 1/2 oz. fresh corn kernels  
1/4 oz. green Onions (cut into thin rings) 
1/4 oz. red onions (cut into fine dice) 
1 1/2oz. Black beans (cooked)  
1/2 oz. sweet red peppers (fine diced) 
1 1/2 teaspoons of finely chopped chipotle peppers in adobo sauce 
1/2 cup chicken stock  
sea salt, black ground pepper to taste 
1/8 teaspoon ground cinnamon 
1/8 teaspoon mesquite seasoning 
1/2 teaspoon honey  
Juice of 1 lime   
1 tablespoon fresh chopped cilantro 
1 1/4 cups of your favorite salsa

Directions:

Season chicken with dry seasoning ingredients and let sit for at least 15 minutes
 Heat saute pan to medium high heat,  
Once hot add 1 tablespoon of olive oil, sear chicken for about 1 minute, 
Add black beans, corn, red onions and chicken stock, 
Let chicken stock reduce by half, then add green onions, sweet red peppers
Add lime juice and adjust seasoning and cool down
Once cool, add salsa, chopped fresh cilantro to chicken and wrap inside pastry dough*
Cook in pre-heated oven at 350 Fahrenheit for about 10 to 12 minutes.
*If dough is not available, simply serve over rice!
