(WJBK) - Are you more comfortable ordering take-out than making dinner? You don't have to be a chef to get comfortable in the kitchen. Kate Payne is out with her second book, 'The Hip Girl's Guide to the Kitchen,' full of tips and tricks to make anyone a good cook. Kate will be kicking off her book tour at Literati Bookstore in Ann Arbor on Saturday, May 24, 2014.

Heat any quantity of milk (can be soured, or about to go bad)to 180°F and remove from heat.
For 1 quart or less milk, add 1 teaspoon distilled white vinegar or lemon juice; for any amount over 1 quart, add 1 tablespoon.
Curds and whey should begin separating immediately.
Stir gently for a minute to facilitate congealing.
Strain ricotta through dampened cheesecloth for 5 minutes, or up to 20 minutes if you want a superdry cheese.
