One-Eyed Betty's crawfish boil

( - Get this recipe courtesy of One-Eyed Betty's, one of the many restaurants taking part in Ferndale Restaurant Week happening now through Sunday, April 27. 


Crawfish Boil


5 lb crawfish
1/2 cup Cajun seasoning
5 ears corn cut in thirds
1 lb polish or andouille sausage
2 lb red new potatoes
Water to cover, in a large stock pot


Add seasoning and potatoes to water and bring to a boil. When boiling add corn and sausage.
Cool for another 10 minutes and then add crawfish.
Cook for another three minutes and then drain.
Reserve the cooking liquid for broth.
Serve either in buckets with some of the cooking liquid Or cover a table with paper and spread out on to table for a fun family style.
