Hanging out in the kitchen with Chef Enzo Febbraro is like trying to play guitar alongside Clapton… Ok, maybe Van Halen! Enzo graduated from culinary school in Italy at age 16 and hasn’t stopped since. After cooking around the world and spending 14 years in Washington D.C., he is back in Las Vegas; this time at the Wynn Hotel’s Allegro.

This is a great, quick dish—especially if you don’t make your own Scialatielli (although his is amazing, filled with spice and a touch of fire).

Handmade Scialatielli with Arugula Pesto and a Lobster and Spring Vegetable Sauce.

Recipe:                 Arugula Pesto                                   

1/4        oz           Garlic                                    

1              oz           Pine Nuts                                           

1              oz           Parmesan Cheese, grated                                           

1/4        #             Arugula                                               

1 1/3      cups       Extra Virgin Olive Oil                                      

1/4        Tbsp      Citric Acid                                          

1              oz           Parsley Leaves                                 

Method :                                                                            

Blend until desired consistency is reached.                                                                         

Serves 4-6
