Spinach Pie by Bosko's Coffee & Kitchen

Spinach Pie (serves 12)
by Bosko's Coffee & Kitchen (Keego Harbor)

Ingredients:
5 eggs
4 oz. sour cream
1 1/4 lb feta cheese
1 lb cottage cheese
2 handfuls parmesan cheese
1/2 stick butter
1 lb chopped spinach
1 lb phyllo dough

Method:
This recipe is very simple but very good.
In a large bowl crack and beat the eggs, mix in the spinach, sour cream, feta cheese, cottage cheese, and parmesan. Melt the butter and stir in then set aside. Brush individual sheets of phyllo dough with olive oil (4 layers of 4 sheets)  fit into a 6x10 inch pan put the first layer down then put one third of the spinach mix on top repeat with the last two layers. Preheat oven to 350, cover with foil  bake for 1 1/2 to 2 hours depending on oven. cook to 160 degrees internal temp. Uncover and cook the top another 10-15 minutes or until golden brown
