The Bronx Deli's hand-cut garlic fries

1 large Idaho potato per serving
1 stick of unsalted butter
1 cup of extra virgin olive oil
2 tablespoons of fresh cut flat leaf parsley
1 teaspoon of kosher salt
4 fresh garlic cloves
Quarter teaspoon of crushed red pepper

For the garlic sauce, put the butter, salt, olive oil, red pepper, and garlic in food processor and mix until blended.

For the potato part:
Wash and dry large Idaho potato and cut into long 1/2" long strip
Blanch the strips in 365 degree oil for 2 minutes, shake basket a few time to keep from sticking together
Let cool to at least room temperature, or put in the fridge until cool. This is key if you want the fries crispy
Take cooled strips and cook in 365 degree oil for 3 to 4 minutes
Drain and put in mixing bowl and sprinkle with kosher salt
Add a heaping tablespoon of the garlic sauce and mix well and parsley and mix
Put in serving dish and enjoy!
