Howe's Bayou's shrimp cake sliders

Ingredients:
2 1/2  lbs raw Gulf Shrimp diced
1 red pepper fine diced
1/2 red onion fine diced
1/2 cup cilantro fine chop
1-2 jalapeno peppers ( or 1 poblano)  fine diced
1/2 cup mayonnaise
1 tsp old bay
1 tsp  salt
1 tsp black pepper
1/2  tsp cayenne pepper
1 Lemon juiced
2 lg eggs
2 cups panko bread crumbs.
2 cups panko reserved.

Method:
Sauté Shrimp then combine all ingredients in large mixing bowl.
Form into 1 to 2 ounce patties. Heat oil in skillet.
When oil is hot coat shrimp cakes with remaining panko and carefully drop into pan.
Do not overcrowd the pan. Cook about 2 min. per side until crispy and brown.
Put cakes on slider role and garnish as you see fit.
May be served with a variety of sauces: Mustard sauce, remoulade, roasted red pepper, etc.
Makes up to 60 patties.
