Fresh, farm-to-table fruits and veggies are the simple ingredients that are at the heart and soul of a vegan diet.
"We're just taking the organic grapes, soaking them, we use a little plant-based veggie wash," explained Spencer Greene, co-owner of Grass Root vegan food delivery service.
He and his wife came up with the concept after opening a restaurant that specialized in raw and vegan foods.
"What people would always say to me is, 'This is great. I feel great when I leave here, I love this food, but when I go home I go back to the same old routine,'" continued Spencer.
While it's nice to have a routine delivery of fresh foods to your door, there's nothing boring about this vegan diet, which includes spectacular salads, pastas, and cheese substitutes.
"Packed with veggies, we've got raw greens underneath there and some couscous tabouleh, which has fresh parsley and tomato and seasonings with a tahini dressing on the side," he said as he showed off the entree.
So it all looks good, but the most important part is how it tastes.
"All of us are very meticulous about the way it tastes, the way it looks, because we eat it too. We eat this food every day," he said.
It's a healthier alternative to frozen meals, Spencer explained, "because it's prepared the morning of and because it's rich in enzymes, vitamins, and minerals."
The freshness is sealed in and ready for same-day home delivery. For about $10 a meal, the idea is a convenient and healthy option for some busy families.
Jen Eggleston says she couldn't live without it. The busy mom has triplets and with three kids running around the house, she has her hands full.
"You can't purchase and make that food for the price you're gonna get it from Grass Root. And the convenience, I mean, it's always here, you know, by 2, 3 in the afternoon; plenty of time before dinner," she said.
She and her husband love the variety and Jen says it's not only tasty, it's also very healthy.
"I get a lot of questions like, 'Oh, does it fill you? You're an athlete?' And it really does and I think it actually boosts my performance."
She says her little ones will also grow into the Grass Root lifestyle.
"It's just a better way to eat. You feel better, you have energy," added Jen, who needs the energy to keep up with her hectic household.
