1 lb Chicken breast - sliced
1 can Bamboo shoots - (19 oz. in thin strips)
1 can Coconut Milk (13.5 oz)
1 cup Mushrooms - sliced
1/2 cup Green pepper - sliced into thin strips
1/2 cup Red pepper - sliced into thin strips
3 Tbsp Thai Red Curry Paste
2 Tbsp Fish Sauce
3 Tbsp Sugar
1/2 cup Basil leaves (Thai basil or regular basil)
Cayenne pepper to taste

All of the ingredients can be found in your favorite grocery store or at an Asian market.

In wok:
Put Coconut Milk and Thai Red Curry Paste into the wok and mix thoroughly until dissolved
Add chicken and cook until chicken is done
Add bamboo shoots, mushrooms, green and red pepper, fish sauce, sugar.  Cook until vegetables are soft.
Season with Cayenne to taste
Add basil leaves, then serve.

Serve over white or brown rice
