HAP’s healthy fruit loaf

Floured baking spray
2 teaspoons baking powder
1/4 cup canola oil
1/2 teaspoon baking soda
6 ounces low-fat Greek yogurt
1/2 teaspoon salt
3/4 cup dark brown sugar
1 tablespoon ground cinnamon
1 large egg
1 teaspoon ground nutmeg
3 egg whites
1 1/2 cups finely grated carrots
1 tablespoon vanilla extract (not imitation)
1 cup mixed dry raisins
2 cups all-purpose flour
3/4 cup mixed dried fruit
1 cup white whole-wheat flour
2/3 cup walnuts, chopped

Preheat oven to 350 degrees.

Spray two 8x4 inch loaf pans with floured baking spray and set aside.

In a large mixing bowl, beat canola oil and yogurt with an electric mixer on medium speed; add sugar and beat well.  Add egg, egg whites and vanilla extract and beat well.  In a separate bowl, combine the flours, baking powder, baking soda, salt, cinnamon and nutmeg.  Stir flour mixture into sugar mixture until just moistened, being careful not to over mix.  Gently fold in the mixed raisins, dried fruits and walnuts.

Pour batter into the prepared loaf pans and bake for 40 to 50 minutes or until a wooden pick inserted in center comes out clean.

Cool in the pans on a wire rack for 20 minutes.  Remove from the pans and cool completely on a wire rack.

Makes:  2 loaves, 12 slices each.
NOTE:  These loaves freeze well.
