Dino's savory apple and ham breakfast quesadilla

Ingredients:
3 medium Granny Smith apples, sliced thin
1 small Spanish onion, sliced thin
1-2 tablespoons butter
2 tablespoons brown sugar
1/4 cup chopped smoked ham
1-2 oz. bourbon, whiskey or liqueur
pinch cinnamon
salt to taste
Honey
Cinnamon sugar mix
Vanilla yogurt

2 medium size tortilla
1 beaten egg

cheddar cheese
6 eggs for scrambling

Preparing and cooking instructions

Pre-heat medium satue pan and add onion. Saute until light brown and caramelized. Add apples, cook 2-3 minutes until they start to get soft. Add ham, saute in with apples and onions. If mixture is too dry add a bit more butter at this point along with the brown sugar. Toss sugar until melted with onion/apple mixture. Add liquor and flambe until mixture somewhat thickens. Add a pinch of salt and cinnamon to taste. Set aside.

Dip tortilla in egg wash until completely coated. Deep fry, pan fry or even cook on a hot griddle until crispy. Melt desired amount of cheddar cheese on one half of tortilla, fill with fluffy scrambled eggs and onion/apple mixture.

Fold in half and cut into three even pie-shaped pieces. Drizzle pieces with honey and sprinkle with cinnamon sugar mix. Finish with a dollop of vanilla yogurt.
