Chef Paul demonstrates soba noodle salad & refrigerator oatmeal

HAP's Chef Paul stopped by 'The Nine' Tuesday to demonstrate a few recipes from ChopChop, a cooking magazine for families.

Cold Soba Noodle salad

Ingredients:
8 ounce package of buckwheat soba noodles
¼ cup low sodium soy sauce
4 scallions, green and whites chopped
2 tablespoons fresh lemon or lime juice
2 tablespoon toasted sesame seeds
2 tablespoons toasted sesame oil
1 tablespoon minced ginger
Optional extras -
½ cup carrot - thinly sliced
2 stalks of celery, thinly sliced
½ cup thinly slice Napa cabbage
½ cup red bell pepper, thinly sliced
½ cup Bok Choy, shredded
¼ cup fresh cilantro or basil
¼ cup chopped toasted peanuts or cashews.

Instructions:
Cook the noodles as per package instructions. When done drain and rinse with cold water to stop cooking process.
In a separate bowl mix the next 6 ingredients (after the noodles) well then stir in the soba noodles to coat.
Add any or all of the extras and adjust seasonings to taste.
Serve or store for up to 2 days in the refrigerator.

Blueberry Refrigerator Oatmeal

Ingredients:
1/3 cup of old fashioned oats
1/3 cup of plain yoghurt
1/3 cup of milk (of choice - almond, soy, ½% 1%...)
2 tablespoons fresh or frozen blueberries
1 tablespoon toasted slivered almonds
½ + honey, maple syrup agave nectar
Pinch of salt
Optional items to add:
Strawberries, apples, pears or mangoes - all chopped instead of blueberries
Chopped walnuts or pecans instead of almonds
A Pinch of cinnamon or ¼ teaspoon of vanilla extract
1 teaspoon of flax seed or wheat germ

Instructions:
Place all ingredients into a container and shake well. Place in a refrigerator overnight and then eat - It is great for eating on the go!
