Santorini Estiatorio's spetsofai sandwich

Ingredients
2 big loukaniko sausages
1 big onion
2 green peppers
1 red onion
2 slices of garlic chopped
1 can of chopped tomatoes juice
1 fresh tomato
3/4 cup of Red Wine
Salt pepper and mint
Olive oil

Method

Step 1
Slice the peppers in length. Heat a bit of olive oil in a frying pan. Throw in the chopped garlic, onions, and peppers.  Fry them for 5-10 minutes in high heat and then remove them from the pan and place them in a bowl.

Step 2
In the same pan put the sausages that have already been cut in large pieces. Add oil If you need a bit more olive oil. Fry them for 5-10 more minutes. When the sausages are done, place the onions, garlic and peppers that were already fried back in the pan and we stir for 5 more minutes.

Step 3
When the peppers are a little bit soft, put in 3/4 cup of red wine and lower the heat. Let simmer for approx. 5 min. Add the chopped tomato juice inside and stir Add salt, pepper and a little bit of chopped mint.

Step 5
Add a little bit of water to the pan and continue to boil it. Continue cooking it until the sauce reduces leaving the sauce thick.
