51 North Brewery's Dragon's Breath Pita Pizza

Get this recipe courtesy of chef Mary Gindhart from the 51 North Brewery in Lake Orion, one of the many eateries taking place in Lake Orion's annual Dragon on the Lake fair happening August 23-25, 2013.

Preheat oven to 450 degrees. Makes about 2-3 Pita Pizzas

Ingredients:
1 pound bulk Chorizo Sausage or links (remove chorizo from casing)
2-3 cups of shredded white cheddar cheese
1 package of your favorite pita bread
½ cup thinly sliced red onions
2/3 cup Dragon Breath Hot Sauce (Recipe below)

HOT SAUCE RECIPE:  (Can be made 1-2 days ahead and stored in refrigerator)
1 Tablespoon Canola Oil
10 Jalapenos (medium to large)
5 Garlic cloves
¼ cup apple cider vinegar
Salt and Pepper to taste

Spread jalapenos and garlic on baking sheet and coat with canola oil.  Sprinkle with salt and pepper.
Place baking sheet in the oven and roast for approximately 25-30 minutes or until jalapenos and garlic turn a dark brown.  While the jalapenos are roasting prepare (instructions below) Chorizo Sausage. Remove from oven and cool, remove stems from jalapenos.  Break out your food processor or blender and add jalapenos, garlic and apple cider vinegar, give it a whirl until smooth.  Add more apple cider vinegar if you would like a looser consistency.

CHORIZO SAUSAGE:
In a medium size sauté pan brown Chorizo Sausage.  Drain sausage in strainer, then move sausage to medium bowl and pat with paper towel to remove excess grease.  Set aside.  

CREATE YOUR PIZZA:
It's time to assemble your pita pizza.  Place pita bread on a baking sheet.  Shmear approximately 3 heaping tablespoons of hot sauce on the pita bread, sprinkle ¼ to ½  cup of chorizo and several slices of red onion over hot sauce, top with 1 cup shredded white cheddar.  Repeat process for more pizzas.

Place baking sheet in oven and bake for approximately 5-7 minutes or until cheese is melted.

Remove from oven, slice and serve.  Enjoy!
