Prince Valley's empanadas de queso

Get this recipe courtesy of Prince Valley Market in Detroit.

1 lb Lard
.5 oz salt
1 oz Yeast
3 oz sugar
3 cups of milk
½ teaspoon of cinnamon
3 lb Flour

Side Ingredients:
1 Plate filled with sugar
Cooking spray

Filling ingredients:
1 lb Cream Cheese
8 oz Sugar

Preparation for dough:
Mix all ingredients until a smooth dough forms and detaches itself from the mixer.

Preparation for filling:
Mix cream cheese and sugar until both ingredients become smooth and creamy.

Preparation for empanadas:
1. Take a small section of the dough (the size of a lime) and roll into an oval shape.
2. Take a rolling pin and flatten the section of dough keeping the oval shape.
3. Once the dough is flat take spoonful of filling and place it in the center of the dough
4. Take one side of the dough and pull it over (covering the filling) and putting pressure
on the ends.
5. Take the empanada and dip the top into the sugar coating it evenly.
6. Spray cooking spray on a baking sheet and place empanadas one inch apart.
7. Once you are ready to bake place into the oven at 350 degrees for 18-20 minutes or until golden brown.
