Author shows how to make challah bread

8 cups flour
1/3 cup sugar
1 Tbs. salt
4 eggs
3/4 cup oil
1 3/4 cups warm water
2 packages dry yeast

Put flour in a large bowl and make a well in the center. Mix the yeast with a little of the sugar plus 1/3 cup of the water in a glass, and pour into the well. Sprinkle with a little flour. When it bubbles, add the rest of the ingredients and knead for about 8 minutes. Let rise, covered, until double in size. Punch down and make2 large or 4 small challahs. Let rise again. Brush with egg and bake at 350 until golden brown.
