Good Day Cafe: House of Cupcakes

Others may have won the battle but husband and wife team Ron and Ruthie Bzdewka won the Cupcake Wars.

The champions of season two of the hit Food Network show shared their recipe for espresso dark brownie cupcakes in the Good Day Cafe.

Espresso Dark Brownie Cupcakes with Fudge Frosting

1 cup unsalted butter, cut into pieces

4 ounces unsweetened chocolate, chopped

1 cup all-purpose flour

1/4 cup unsweetened Dutch-process cocoa powder, sifted

2 tablespoons finely ground espresso

1/4 teaspoon salt

1 3/4 cups packed brown sugar

1/2 cup granulated sugar

4 eggs

Fudge frosting, recipe follows

Preheat oven to 350 degrees Fahrenheit

In a small microwave safe bowl, combine butter and chocolate. Microwave on high for 60 seconds, uncovered. Stir every 30 seconds until butter and chocolate are melted and smooth. Set bowl aside to cool. In another small bowl, mix together flour, cocoa powder, espresso and salt, set aside. In a large bowl, use an electric mixer with beater attachments mix the brown and granulated sugars and reserved chocolate mixture until well combined. Add eggs one at time, beating each time, add flour mixture until blended. Bake in the preheated oven, rotating tins halfway though, until golden for 18 to 20 minutes. Transfer tins to wire racks to cool completely before removing cupcakes.

Fudge Frosting

3/4 cup unsalted butter, at room temperature

Pinch salt

2 cups confectioner's sugar

3/4 cup unsweetened Dutch-process cocoa powder

In a small bowl, use a beater to mix the butter and salt until creamy. Using a mixer on low speed beat in confectioner's sugar a 1/2 cup at a time. Add cocoa powder, beating until extremely smooth and creamy.

Prep Time: 15 minutes

Cook Time: 18 to 20 minutes

Inactive Prep Time: 10 minutes
