Michigan Humane Society to host 'Bow Wow Brunch'

The Michigan Humane Society will hold its 24th annual Bow Wow Brunch, presented by Compuware Corporation, on Sunday, April 28 at the Dearborn Inn.

The event will include live and silent auctions featuring more than 100 items, a champagne reception, local celebrities and adoptable animals. To reserve your tickets, call 1-866-MHUMANE (648-6263).

Spinach and Ricotta Cheese Stuffed Chicken with a Creamy Tomato Basil Sauce

Ingredients:

Chicken Breast - 6ea (6oz)
Ricotta Cheese - 4oz
Spinach - 2oz
Whole Egg - 1 each
Kosher Salt - To taste
Ground Black Pepper - To taste
Garlic - 1oz
Shallots - 1oz
Roma tomatoes - 4oz
Fresh Basil - 1 bunch
Heavy Cream - 4oz

Chicken:
Take two of the chicken breasts and chop into cubes.
Insert a knife into the 4 remaining chicken breasts to form a cavity in each one.
Grind the cubed chicken in a food processor to a ground beef consistency.
Add the ricotta, the well washed spinach leaves and the egg.
Season with salt and pepper.
Using a piping bag pipe the stuffing into the seasoned chicken breasts.
Heat a sauté pan with a little olive oil.
Season the chicken breasts with salt and pepper and place into the hot pan skin side down.
After turning brown turn the chicken breast and place into a 350 degree oven for approximately 15 minutes. Remove from oven when the internal temperature reaches 165 degrees.
Slice into 4 neat slices and serve on a bed of fettuccini with a tomato cream sauce.

Tomato Cream Sauce:
Sauté the chopped garlic and shallots in a pan.
Add the chopped Roma tomatoes and the chopped basil.
Allow to cook for 5 mins.
Add the heavy cream and allow to cook for 5 mins till the sauce becomes a thickened.
Season with salt and pepper.
