Dino's method to making calamari

Get this recipe courtesy of Dino's Lounge in Ferndale.

Beurre Blanc sauce
White wine - 3 cups
Lemon Juice - ½ cup
Reduce to ½ cup and add 1 quart of heavy cream
Simmer and reduce until it starts to thicken
Whisk in 1/2 lb. butter until fully incorporated
Add salt and pepper to taste

Fry Flour

Flour 1 quart
Fry Salt 2 oz
Paprika 2 oz
Mix together

Calamari Method
Fryer oil - 2 gal
Heat oil to 325 degrees

Calamari Filet     6oz
Julienne onions    ¼ cup
Baby spinach    ½ cup

Dredge calamari in fry flour, shake off excess flour, lower calamari & onions into the oil, let fry for aprox. 3 minutes (till golden brown), drop spinach into oil with the calamari & jump back from spatter, remove from oil, let drain, put into a mixing bowl and toss with 12 grape tomato quarters and 2 oz. of Beurre Blanc sauce.
Plate & garnish with a lemon wedge.
