Colonnade Restaurant celebrates New Year

Many people have already picked up some items from the grocery store for their New Year's Day dinner. Some of those items may have included traditional foods like black-eyed peas, collard greens, pork, and cornbread.

Chef Ryan Cobb of Colonnade Restaurant stopped by Good Day Atlanta on Monday to talk about some of these traditional foods and why we eat them for the New Year.

Hours for New Years Eve are 5:00- 9:00 and they will have some wonderful specials prepared by Chef Ryan.  On New Years Day, the hours are from 12:00-9:00 and they will be serving complimentary Black-eyed Peas to everyone with the hopes that it brings good fortune for 2013.

Recipe for Collard Greens

Ingredients:
1 large bunch of collard greens, chopped and washed
1 Tsp garlic, minced
1 large Vidalia onion, julienne
1 Tbsp oil
1-2 ham hocks, turkey necks or 1 hog jowl
1 qt chicken or vegetable stock
Salt and Pepper to taste
1 Tbsp balsamic vinegar
2 pats of butter

Preparation:

Sauté onion and garlic. Add remaining ingredients except salt, pepper and butter. Cook 3 to 4 hours on low to medium heat until meat is falling apart and leaves are tender. Season to taste. Add butter.
