Ingredients:
½ cup low fat plain Greek Yogurt
½ cup reduced fat mayonnaise
1 tablespoon coarse grain mustard
2 tablespoons honey
¼ cup minced chives
1 tablespoon fresh tarragon, minced
½ teaspoon sea salt
½ teaspoon freshly ground black pepper
4 cups diced, cooked turkey
½ cup dried cranberries
1 cup walnuts, toasted
8 cups mixed greens
2 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
1. Combine the Greek Yogurt, mayonnaise, mustard, and honey in a large bowl and whisk until completely combined. Gently stir in the chives, tarragon, sea salt, and pepper.
2. Add the turkey, cranberries, and walnuts to the dressing and gently toss to combine.
3. In a separate bowl, combine the greens with the olive oil and lemon and toss to lightly dress.
4. Divide the dressed greens between 6-8 plates. Top each portion of mixed greens with turkey salad.
