Here is the recipe featured on FOX 2 News Morning:
3-4 Crimini Mushrooms sliced
6-8 Asparagus Spears
2 Large Artichoke Hearts quartered
¼ Red Onion thinly sliced
¼ Red Bell Pepper coarsely diced
4-6 Grape or Cherry tomatoes cut in half
2 Tbs chopped garlic
Olive Oil
White wine
Fresh spinach leaves
McCormicks Perfect Pinch Vegetable Seasoning
Heat Olive Oil and garlic over moderate high hear for few seconds. Add mushrooms and asparagus spears and seasoning and more olive oil as needed. Continue to add the artichoke, onion and red bell pepper with additional olive oil and seasoning. After one to two minutes turn heat up to high and add approximately ¼ cup of the white wine and the tomatoes. Cook on high for approximately one minute let cool briefly and then pour over the fresh spinach and enjoy.
