
Chef Nicholas Armstrong comes to the Good Day Café to cook New Bedford Day Boat Scallops.
He's been a chef with Siro's in Saratoga for the past 6 years and now he is the new executive chef at Siro's in Manhattan.
New Bedford Day Boat Scallops with Cauliflower Puree
Serves 4
16 U10 day boat scallops
2 cups carnival cauliflower
3 cups heavy cream
1 cup freshly grated Parmesan cheese
1/2 lb. fresh basil
2 cups blended oil (about 2 tablespoons of blended oil to cook scallop)
1 tablespoon butter
Salt to taste
Cauliflower Puree: steep cauliflower with cream, let reduce to about half in volume, blend cauliflower and cream in a stand up blender, season with salt.
Parmesan Crisp: place freshly graded Parmesan cheese on a sprayed rubber mat and bake at 350F till golden.
Basil Oil: blanch and shock with cold water freshly picked basil and strain. Add cooked basil to blender with blended oil and emulsify. Season to taste.
Scallop: Flash sear scallop in hot sauté pan. When scallop is done add butter and baste with browned butter.
To plate, put a few spoonfuls of cauliflower puree on your dish, and top with 4 scallops per plate. Drizzle with basil oil and top with a parmesan crisp.
Nicholas Armstrong, Executive Chef, Siro's of Manhattan
Chef Nicholas Armstrong specializes in the celebratory continental cuisine that Siro's is so well known for. Armstrong was inspired to pursue his culinary education at the University of Johnson & Wales after working in the kitchen at Siro's in Saratoga. After taking a position at Siro's one summer, he instantly connected with the legendary institution's renowned culinary team and realized that cooking was his calling.
While studying at Johnson & Wales in Providence, he was recruited by Chef Matt Maue from Tastings Wine Bar and Bistro in Gillette Stadium for a highly competitive position amongst J&W students. While there, he developed a new appreciation for experimental food concepts and worked with a talented team that taught him to taste with his heart.
He was brought back to the Siro's team by Chef Ryan Reed, who was working on opening a sister restaurant to the original Siro's called Siro's Trattoria, also located in Saratoga Springs. Armstrong opened Siro's Trattoria working under Tom Dillon, the original chef of Siro's, where a Mediterranean flair was married with the classic touch of the legendary Siro's continental cuisine.
Chef Armstrong worked with the Siro's team in Saratoga until the brand expanded once again, this time with an NYC location, Siro's of Manhattan. Working with Chef Brady Dillon to successfully open the new venture, Chef Armstrong quickly rose up the ranks and has been appointed as Executive Chef of the sophisticated Manhattan destination.
A NIGHT WITH MO: FUNDRAISER IN SARATOGA AUGUST 9
Siro's Trattoria at the Lodge will welcome legendary New York Yankees pitcher Mariano Rivera for "An Evening with Mo" to support the Mariano River Foundation on Thursday, August 9 at 6:30 p.m. The exclusive evening will include a plated dinner and a casual conversation with Rivera. Attendees will also receive a signed baseball and have their photograph taken with the All-Star New York Yankees pitcher. The private dinner at Siro's Trattoria at the Lodge will benefit the Mariano Rivera Foundation, which addresses children's needs through programs that focus on education, health and wellness.
Rivera played briefly for the Albany-Colonie Yankees before he began his major league career with the Yankees in 1995. He is regarded as the most dominant relief pitcher in baseball history. The 12-time All-Star and five-time World Series champion has handcuffed batters with his legendary cut fast ball on the way to becoming baseball's greatest postseason pitcher ever. In 2011, he set the Major League Baseball record for career regular-season saves which currently stands at 608. Rivera is recovering from knee surgery following a season-ending injury in May and plans to return to the Yankees next year for his 19th major league season.
