Tia Keenan, the chief fromager of Murray's Cheese Bar, and Robert Kaufelt, the store's owner, visited the Good Day Café and prepared a versatile cheese sauce great for any recipe that calls for a cheese sauce.
1/2 lb. béchamel 2 tbsp. cream cheese 1 tsp. Dijon mustard 8 oz. dark porter beer 1/4 cup heavy cream 8 oz. shredded cheddar cheese (we use prairie breeze cheddar) Dash of hot sauce
Gently heat the béchamel and whisk in the Dijon and Worchestire. Blend.
Add the beer and whisk to combine.
Pour in the cream and the cream cheese. Whisk til blended and smooth.
