8 oz. Brussels sprouts, cut in half ¼ pound Yukon potatoes ½ cup milk ½ heavy cream 2 tsp hazelnut oil Piave cheese, sliced very thinly (like parmesan) Capicola (country-style cured ham, very inexpensive)
Boil potatoes in salted water. Peel and set aside.
Warm cream, milk and oil in a saucepan.
Mix potatoes and cream mixture in blender until you reach a light moussy texture
Coat a sauté pan with canola oil and pan fry Brussels sprouts.
