Napoleon Puff Pastry
½ qt heavy cream (whipping cream)
6 egg yolks or pasteurized yolks
6 oz confection sugar
1 teaspoon real vanilla extract
1 sheet of puff pastry (cut into 12)
Whip egg yolks until light and fluffy.
In a separate bowl whip heavy cream with confection sugar, add vanilla extract at end.
Gently fold whipped egg yolks into whip cream.
Slice pre-cooked puff pastry in half.
Dollop 2 tablespoons of cream into middle of each piece of puff pastry and then coat outside of puff pastry with cream mixture.
Break-up remaining puff pastry into crumbs and sprinkle as garnish.
