Atomic "Hot" Wings
2 cups of your favorite "quality" hot sauce -- (aged red
cayenne pepper, vinegar, water, salt & garlic powder)
2 lbs. chicken wings -- cut into wingettes -- no wing tips
1 7-8 qt. pot
1 gallon vegetable oil
1 4-6 qt. pot or container with lid or a tong -- to coat
wings
Heat oil in 8 qt. pot. Must reach a temp of 350 degrees -- you can test it by dropping a piece of bread in the oil -- if it floats and starts to fry in 10-15 seconds it is ready.
Rinse wings in water -- Pat dry. Fry Wings in oil for about 13-15 minutes depending on size. Must be golden brown and crispy.
Put hot sauce in 4-6 qt container. Place cooked fried wings in
to hot sauce mixture.
Coat wings evenly and plate. Serve with your favorite Blue cheese and with celery and carrots.
Atomic Wings Chicken Littles Recipe
1 lb of chicken tenders- rinsed
2 cups of corn meal-- fine grit
2 tablespoons of parsley flakes -- dried
1 tablespoon of tarragon -- dried
1 tablespoon of rosemary
1 tablespoon of black pepper
1 teaspoon of salt
1/2 gallon of vegetable oil
1 4-6 qt. bowl -- for mixing and breading
1 8 qt frying pan or pot
1 tong for frying and tossing
2 cups of your favorite hot sauce or BBQ sauce
Combine all dry ingredients in mixing bowl. Heat oil in pot to 350 degrees (medium flame for 8-10 minutes). Place chicken breast in dry mixture to bread. Bread evenly. Place in hot oil and fry for 7-9 min. Take Chicken Littles directly from fryer and place in hot sauce. Toss evenly with sauce and plate. Add a side of blue cheese or ranch for dipping.
