Mara Levi, owner of Mara's Homemade on the lower East Side, prepared artichoke dip in the Good Day Cafe.
Recipe for Artichoke Dip from Mara's Homemade:
1 - 14oz can quartered Artichoke Hearts
½ Cup finely shredded Parmesan Cheese
1/8 teaspoon Granulated Garlic
Pinch ground Cayenne Pepper
3 Tablespoons Mayonnaise
Additional shredded Parmesan Cheese
Paprika
Table Water Crackers
Preheat oven to 350. Rinse artichoke hearts and place in food processor. Pulse until coarsely chopped, scrape down walls at least once during the processing. Remove to shallow ovenproof dish. With fork or whisk, stir in seasonings and cheese. Thoroughly mix in mayonnaise. Evenly spread in ovenproof dish. Lightly sprinkle with Paprika for garnish. Sprinkle with additional Parmesan Cheese. Bake 15 - 30 minutes or until top is golden and bubbly. Serve hot with Table Water Crackers.
