1,000-Year-Old Ice Cream Sandwich Recipe from Xie Xie

David Andrews, the pastry chef of Xie Xie and the creator of the popular 1,000-Year-Old Ice Cream Sandwich, comes to the Good Day Café to teach us how to make that delicious sandwich.

1,000-YEAR-OLD ICE CREAM SANDWICH

COCOA NIB COOKIE

1/3 cup cocoa nibs
6 oz butter
3/4 cup sugar
1/2 cup brown sugar
1 egg
6 oz melted dark chocolate
2 cups flour
1 tsp baking soda
1 tsp salt

Grind the cocoa nibs.

Cream the sugars, butter and cocoa nibs. When fluffy add the egg, then the melted chocolate. Sift in the flour, baking soda and salt.

Bake at 325 for 5 minutes, turn and bake another 5 minutes.

Makes 20 cookies or 10 Ice Cream Sandwiches.

CARAMEL ICE CREAM

2-1/2 cups sugar
3-1/2 cups cream
5 oz butter
1 tsp Vanilla
1-1/2 tsp salt
Bring to a boil the cream, butter and salt.

Caramelize the sugar to an amber color, add to the liquid.

Finish with the vanilla and cool in the refrigerator.

This recipe will fill 10 ice cream sandwiches with a little left over. Keep in the refrigerator for a late night snack.
