MYFOXNY.COM - Chef Steve Terdusco of OTG (On The Go) Restaurant at the Jet Blue Terminal at JFK airport showed NY Weather Authority Mike Woods how to prepare tropical fruit kabobs with yogurt sauce.
Recipe
Tropical Fruit Kabobs with a citrus yogurt
sauce
Ingredients
1 Pineapple
2 Mangos
4 Bananas
2 Kiwis
1 Tsp Sugar in the raw
Mint sprig
1 Cup Greek Yogurt
3 tbls Honey
1/2 tsp Orange Zest
Peel and cut all fruit into cube size pieces, about ½ inch thick
Place fruit on large skewers (color coordinate to your liking)
Sprinkle Sugar in the raw all over skewers
Place skewers on a medium to high flame, and rotate after one minute getting all sides with grill marks
Yogurt Dipping Sauce
Mix yogurt with honey, add in zest, and chill for 30 minutes.
Place skewers on plate garnish with fresh mint and serve
sauce on the side
