Hambletonian Day

MYFOXNY.COM - Frank Travisano, senior executive chef at the Meadowlands, is showing the Good Day Café how to make a simple but special dish in honor of Hambletonian Day (August 8, 2009) at the Meadowlands Racetrack.

>HAMBLETONIAN DAY

LINGUINE WITH WHITE CLAM SAUCE
Prep time: 5 minutes; cooking time: 15 minutes

8 ounces linguine
1 tablespoon olive oil
1 dozen Jersey littleneck clams
1/3 cup minced shallots
1 tablespoon minced garlic
1/2 cup dry white wine
1/4 cup clam juice
1/4 cup crushed red pepper flakes
1/4 cup kosher salt
1/3 cup fresh parsley
1/2 fresh lemon, squeezed
3 tablespoons unsalted butter
Garlic crostini

Cook pasta in boiling salted water until al dente (about 5 minutes).

Shuck half dozen clams and set aside, saving juice.

Sauté shallots and garlic until translucent over medium heat.

Add half dozen fresh clams in their shells, wine and clam juice.

Cook for about 8 minutes or until shells open.

Add reserved clams, pepper flakes, parsley, lemon and finish with whole butter.

Toss with linguine and garnish with shell clams and garlic crostini.

CHEF'S TIP: When purchasing clams, make sure that they are alive. Select clams that are tightly closed. If the clam looks opened, just leave it alone. Rinse well in cold kosher salted water to help remove sand.
