Corned Beef Reuben
**each makes one open face reuben sandwich**
Ingredients
2 slices of pumpernickel health bread / rye bread
8 ounces lean corned beef
1/3 cup cole slaw (3 oz)
4 slices of swiss cheese (4 oz)
1 tablespoon russian dressing (ketchup, mayonnaise and
relish)
Directions
* In a pan or on a grill, place bread with butter, Russian
dressing, then cole slaw on top
* In another pan, steam corned beef in water
* When corned beef is heated through and bread is toasted,
put meat on the bread
* then lay Swiss cheese slices on top and broil until
golden
Take out and serve open face.
