Potato and Egg Sandwich from Defonte's of Brooklyn

MYFOXNY.COM - The Good Day Cafe learns how to make a classic potato and egg sandwich from Nick and Vinny Defonte. The father-and-son team own Defonte's of Brooklyn, a family sandwich shop that's been in business since 1922.

Potato and Egg Sandwich
(makes filling for 4 sandwiches, assembling is one sandwich)

1) Boil 4 potatoes until soft
2) Peel potatoes and mash in following ingredients:
1 chopped onion
1/2 cup of parsley
2 tablespoons of salt
1 tablespoon of black pepper
1 tablespoon of garlic powder

3) after mixing ingredients, put smashed potatoes on a baking pan and bake potatoes

4) put baked potatoes into a large container, refrigerate and smash again.

5) mix 4 eggs and one handful of potatoes in a bowl, add oil to pan, let it get hot and cook omelet. After each omelet, add 2 slices of mozzarella and repeat until desired amount is reached.

6) place omelet on Italian bread
