Matzo Balls Recipe from Ben's Best Deli

MYFOXNY.COM - Jay Parker, the owner of Ben's Best Deli in Rego Park, Queens, shares his recipe for matzo balls. This recipe makes 4 servings.

4 eggs
1/2 cup club soda
3 tablespoon vegetable oil
1 teaspoon salt
Black pepper, a pinch
1 cup matzo meal
1 sprig of dill

Beat the eggs. Add the club soda, mix in the vegetable oil, add the salt and pepper. Then add the matzo meal, and mix.

Cover and refrigerate for 1 hour.

Bring to a boil 4 quarts of water and then reduce the flame. (If the water is too hot the inside will not cook through and the outside will fall apart.)

Rub some vegetable oil on your hands to prevent the mix from getting too sticky. Form the matzo balls with 2 tablespoons of mixture (the balls will double in size while cooking).

Cover and cook for about 30 minutes. With a kitchen fork test the center, when soft remove from water.

To reheat: Place in chicken soup and let simmer. Garnish with dill and serve.
